This appetizer can bring all the meditteranean essence in one bite. Fresh grilled bread, a rich white cheese and of course olive paste from the best variety kalamon olives.

  • 6 french bread slices
  • 6 tablespoons soft white goat cheese
  • 1 garlic clove, peeled and smashed
  • some sundried tomatoes optionally
  • freshly chopped parsley.
  • Ef Zin Olive Paste from kalamon olives

Serve with some drops of  Ef Zin Extra Virgin Olive Oil


First start with the bread by preheating the grill in your oven to the maximum heat. Place the bread slices in a non sticky suface on the top of the oven racks. Be careful not to burn them. They will only need 3 minutes on each side, depending on how “smoky” you like them.

Take the breads out and place them on a nice big plate. Take the garlic clove and just rub gently the surface until they absorb some spicy garlic flavor.

Then place 1 tablespoon of soft goat cheese on each bread (or soft feta cheese if you would like it greek all the way!) and spread it. Then paste one teaspoon (or even some more) on each slice and again smooth in on top of the cheese.

Chop some sundried tomatoes and sprinke them along with the parsley.

You will have infront of you a full – flavored appetizer with colorful layers which combined all togehter will exlode before you go to main course. Just make sure that you have something really nice ahead in order for this bruschetta not to overpower the whole meal!
